2013 Estate Cabernet Sauvignon, Calistoga, Napa Valley

2013 was a classic vintage for Napa Valley Cabernet. flowering and fruit set were perfect, with a long warm summer and cool evenings allowing for extended hang time and full flavor development. Harvested in late October, the grapes were cold soaked for 6 days prior to fermentation to maximize extraction of color, weight, aromatic and flavor components. The wine was aged in a combination of new and neutral French oak for 24 months. Aromas of black cherry, raspberry, coffee, mocha and oak follow through to the palate. This is a huge, full-bodied cabernet with firm tannins and a long lingering finish. Although drinkable now, it will clearly benefit from a few years of cellar aging. Decanting suggested.
